迷你巧克力烤皮斑斓莲蓉蛋黄月饼 (Mini Baked Chocolate Pandan Lotus Egg Yolk Moon Cake)



这个月饼是我第二次做的
第一次饼皮干得完全包不了陷
疯了似的猛想着为什么!为什么!!!
隔天赶紧问问娘子
她建议我使用半分材料再使用其它牌子可可粉
我试了。。。还是不行
为了不想浪费了唯有再加些糖浆和油
再让它休息15分钟再包馅
这次行了,谢谢娘子虽然感冒声音变了还乐意打电话给我与我分析
感恩能够在网上认识如此有义气的朋友

昨天和朋友闲聊
他近来也在学习这做月饼
他告诉我有个月饼师傅曾经告诉他
糖浆对于做月饼来说是非常重要的
煮得够火候的糖浆面团才不会干
我猛然想起是不是我的糖浆已经出现问题了呢?
看来我要重新煮过糖浆了吧。。。。






原本真的不想包咸蛋黄进去
可是小恐龙一直吵要吃
唯有把一颗咸蛋黄切半包入
想不到小恐龙还真的开心死了
为了让家人开心而再累也是值得的


食谱 Recipes :Alan Ooi Mooncake Sonata Page:43
食谱分享 recipes sharing from : 娘子 & Cass

1.将所有饼皮材料混合拌匀。放置休面30分钟。将面团分割成20g
Mix ingredients till well combined.Set aside for 30 minutes. Divide dough into 20g each.
2.将莲蓉和蛋黄秤总数30g,再把蛋黄包入莲蓉馅内。
Divide and weight lotus paste and egg yolk till total 30g,then wrap in the yolk into lotus paste.
3.将饼皮裹入馅料,搓圆后压入月饼模里,扣出排在烤盘上。
Wrap filling with moon cake pastry. Roll into ball.Press into moon cake mold.Tap lightly to demould.
4.放入余热烤箱以180度烤10分钟,然后取出,放置一旁待冷却,约10分钟。再放入烤箱继续烤10分钟。
Bake in a preheat oven at 180*c for 10 minutes. Remove and leave to cool, about 10 minutes. Bake again in oven for 10 minutes.

红糟烧肉 (Braised Pork With Anka Suace)


一道看似简单的佳肴,却能让胃口大开
一道看似好吃的佳肴,却能让心情大好
一道看似随便的佳肴,却是充满爱的意义


因为每次放工孩子都说饿了,而我也很累
所以近来的晚餐都外吃
其实看似方便可是却带有少许的歉意
无法让孩子坐在自家饭桌慢慢扒饭
却要在外头吵杂的环境吃饭
心里总有点过意不去
所以如果早上可以的话
我都会先煮了午餐带出去,和孩子办公桌上一起享受
至少也是自己的地方
自由自在的天南地北的说说骂骂吃完饭


在网上闲逛找灵感,无意间看到Carol家这道简单的肉
冰柜里有一条五花肉,也有红糟酱
就腌了3天等待收成煮来吃
可惜,孩子不喜欢它的味道
到后来是我和老的一人一块吃完了
老的说味道有点像叉烧,却没有叉烧的好味道
忘了跟老的说:老的,每次我腌的叉烧都放了红糟酱一起腌,你现在当然觉得味道像
可是叉烧有放蜜糖,可这没有哦
难道,他在暗示我烤叉烧给他吃呗?
呵呵呵呵 


红糟烧肉 (Braised Pork with Anka Sauce)

五花肉 Pork belly 300g
红糟酱 Anka Sauce 25g
蒜头 Garlic 5~6片/Clove 
地瓜粉/木薯粉 Topiaco Flour (Use before fry)炸前涂上

调味料 (Seasoning) 
米酒 Rice Wine 1 tbsp (I used Shaoxing Wine 我用绍兴酒)
盐 Salt 1tsp
白胡椒粉 white Pepper 1/4tsp
糖 Sugar 1tsp

做法 Method:
1.五花肉洗净、蒜头切末,将蒜末和调味料加在五花肉上涂抹均匀。
Wash pork belly and mince garlic,put garlic and seasoning into cleaned pork belly to cover all over the pork belly.
2.将五花肉放在密封塑料袋放入冰厨腌制2~3天。
Marinate for 2~3 days in fridge using a sealed plastic beg .
3.把五花肉涂抹薄薄一层木薯粉,锅内热油,放入腌制五花肉炸至金黄色。
Cover marinated pork belly with topiaco flour,heat frying oil,fry marinated pork belly till golden brown.

**因为家里的木薯粉剩很少,所以我炸得并不会呈现金黄色。**
**Because just left some topiaco flour,so i just cover little the pork,so my pork belly did't so golden brown after fried.**

台式绿茶莲蓉凤梨月饼 (Taiwan Green Tea Lotus Paste & Pineapple Moon Cake)

我这几天赶工做月饼,出来的成品很不满意
不是面团太干无法包馅,就是没注意火候把月饼差点烤坏
就拿这台式月饼,一时没注意之前用来预热烤鸡
整200度的烤箱烤只需180度的月饼
幸亏发现的早,可是太热的关系吧
它们都出现裙角了
啊。。。我真的很挫败
去年的月饼我烤得相当满意
今年信心满满的包没问题
我忘了
每次我信心满满的当儿
出来的成品我都很失望
天啊!老天啊!
我今年想放弃做月饼啦



可是哦。。。。。。
昨天在某间出名的饼店买蛋塔
顺便瞄一瞄店家的月饼价钱
真的我的妈啊!
只一粒普通的蛋黄莲蓉月饼也要正RM20了
一盒四粒虽然有折扣可是也要整RM60
如何买得小手?
我看那。。。我还是乖乖被这些月饼折磨我吧
呵呵呵呵


用了绿茶莲蓉和凤梨馅当内陷
味道如何?
有淡淡的绿茶香也有少许酸甜的凤梨
可能一些传统思想的人会认为这根本不是月饼
只不过是饼干
而我管他的,只要在中秋的时候做的都算是月饼了



Taiwan Green Tea Lotus Paste & Pineapple Moon Cake
Yield 12 piece 50g moon cake

Butter 35g
Icing Sugar 20g
Moon Cake Syrup 45g
Egg 30g
Salt 1/4 tsp
Low Protein Flour 120g
Green Tea Lotus Paste 300g
Pineapple Paste 120g

做法 Method :
1.奶油室温软化,加入糖粉拌匀。
Let butter in room temperature,add in icing sugar and mix well.
2.再把其他材料拌入,搅拌成团后盖着静置30分钟。
Add in other ingredients,mix till become dough,cover & let it rest for  30minutes.
3.把面团分割成20g的小面团,搓圆备用。
Divide the dough into each 20g small dough,roll & set aside.
4.取17g莲蓉,再取8g凤梨馅,用莲蓉包裹着凤梨馅。
Divide each 17g lotus paste & each 8g pineapple paste,use lotus paste wrap the pineapple paste.
5.把馅料包入面团里,搓圆,放入模型,压出形状。
Wrap in the paste into dough,roll & put into moon cake mold,press out the shape.
6.放入预热烤箱180度,10分钟,取出,待5分钟,扫上蛋液,继续烤至金黄色,大概8分钟即可。
Bake into a preheat oven 180 degrees for 10 minutes,take out,wait for 5 minutes & egg wash,continue bake till golden brown,around 8 minutes.

蓝莓优格芝士蛋糕 (Blueberry Yogurt Cheese Cake)

朋友即将在这个星期五生日
正日当然是让给她的爱人与她庆祝
而我们身为朋友的唯有提前为她庆祝
她~最爱芝士蛋糕
她~不爱鲜奶油
她~很爱巧克力
所以特地做了一款完全符合上述条件的蛋糕
另一位朋友不爱芝士蛋糕
为了哄她吃下所以加了优格进去
再放了蓝莓酱
这样既能吃到芝士也能把芝士蛋糕做得并不腻
我的这一“壮举”。。。嘻嘻嘻
是成功的
主角说好吃
连不吃芝士的另一位好友也把自己那块蛋糕也吃完了



我们5个朋友现在变成能一起相聚的只有我们三位
再介绍一位新朋友跟大家认识
希望我们四个朋友并不会因小事而分道扬镳
希望我们都能每一年为大家庆祝生日
也希望我们友谊永固!



蓝莓优格芝士蛋糕 Blueberry Yogurt Cheese Cake
Size:6"

饼底材料 Biscuit base 
Oreo 饼干 120g (取出内陷Take out the filling)
奶油 (融化)Butter (Melted) 60g

做法 Method
Oreo 饼干用食物处理器或放入密封塑胶袋内用擀面棍敲碎,取出倒入碗内,融化奶油倒入搅拌均匀。
把饼干碎倒入6吋脱底圆模,用手大力压紧,放入冰厨冷藏。
Place the oreo biscuit into a food proccesor and whiz unti quite fine.Alternatively,place them in a plastic beg and bash with a rolling pin.Mix the mashed biscuit with melted butter in a bowl.
Press down the biscuit into a 6 inch loose-bottom round mold till nice & even,place in fridge.

蛋糕体 Cake base
Philadelphia 奶油奶酪 Cream Cheese 250g (室温软化 In room temperature)
细砂糖 Castor Sugar 2tbsp
动物鲜奶油 Whipping cream 50ml
原味优格 original Flavor Yogurt 135g
鸡蛋 Eggs 2pc
玉米淀粉 Corn Starch 2tbsp
低筋面粉 Low Protein Flour 2tbsp
蓝莓果酱 Blueberry Topping Jam

做法 Method
1.奶油奶酪和细砂糖搅拌至滑顺,鸡蛋打散,分次加入搅拌均匀。
Beat cream cheese with castor sugar till smooth,lightly beat the egg,add in one in a time till well combine.
2.倒入动物鲜奶油和优格搅拌均匀。再过筛玉米淀粉和低筋面粉至无颗粒。
Pour in the whipping cream & yogurt mix till well.Shift in the corn starch & low protein flour and mix till well combine.
3.把一半的奶酪糊倒入模内,再勺些蓝莓果酱在里面,把剩余的奶酪糊倒入至完。
Pour half of the cheese into mold,spoon fews spoon blueberry topping jam in,and pour the remaining cheese till finish.
4.放入预热烤箱,蒸烘法160度,1小时至表面呈金黄色。
Baked into a preheat oven with steam bake for 160degrees,1hour till the surface turn to golden brown.
5.放在烤箱内至完全凉透,就开始做巧克力淋酱。
Let it cool in the oven,then start to make chocolate topping when it's completely cool.

巧克力淋酱 Chocolate Topping
黑巧克力 Dark Chocolate 70g
动物鲜奶油 Whipping cream 60ml
奶油 Butter 15g

做法 Method
把所有材料放入锅内,隔水融化至奶油和巧克力完全融化,倒入蛋糕上,放入冰箱冷藏4小时。
Double boiled all the ingredients till the butter & chocolate totally metled,pour onto the cake,cool in the fridge for 4 hours.

4小时后,用刀子沿着模子边割开脱模即可。
After 4 hours,run a knife around the edge to loosen it from mold.

台式盐酥鸡 (Taiwanese Style Salt & Pepper Chicken)


隔壁家Aunty种了很多漂亮的九层塔,死不要脸的我跟她要了一些来种
可是,偏偏我这个娘儿差劲得很
原本青青绿绿的九层塔被我种得叶子变黄、也小小片
真的愧对她老人家
不管三七二十一,摘了一些来煮盐酥鸡
希望她老人家还没发觉我把这九层塔种得如此差劲吧
哈哈哈哈


 各位朋友抱歉啦
店里的键盘坏了无法用,还没时间去买新的
要回到家才能用laptop上,可是偏偏前几天的wifi short了
所有不得空找大家哈拉



台式盐酥鸡 Taiwanese Style Salt & Pepper Fried Chicken

材料Ingredients :
(A)
去骨鸡腿肉 Boneless Drumstick 1 pcs
蒜茸 Minced Garlic 2 tbsp
胡椒粉 Pepper 1tsp
糖 Sugar 1tsp
五香粉 Chinese five Herbs 1tsp
酱油 SoySauce 1tsp
鸡蛋 Egg 1pc
(B)
地瓜粉/木薯粉 Topiaco Starch
九层塔 Basil Leaves
胡椒粉 Pepper
辣椒粉 Chili Powder

做法 Method:
1.鸡肉切小块,把所有A料加入,用手抓,盖着腌制隔夜。
Cut chicken into bite-size cube,mix all ingredients using hand,marinate overnight.
2.热锅、热油,鸡肉用地瓜粉裹着,等回潮,放入热油内炸至金黄色。捞起沥干油。
Heat pan & oil,cover the marinated chicken into topaico starch ,fried till golden brown.Remove from oil & strain.
3.把热油以大火烧热,把炸好的鸡肉再次倒入炸至声音变小,加入九层塔一起炸,捞起。
Heat oil using high heat,put back the fried chicken into the oil to fry till the sound become small,add in the basil leaves to fry together,remove & strain.
4.趁热洒上胡椒粉和辣椒粉即可上座咯。
Sprinkle pepper and chili powder onto the chicken while still hot.Now it's done and can be served now!!

榴莲巧克力冰淇淋月饼 (Durian Chocolate Ice-Cream Moon Cake)


去年开始已经想做这款月饼
不过当时接了些燕菜月饼的单子
材料都买了
可是到后来赶单子赶得晕头转向
最后索性打消念头

开斋节回老家时带回来了很多榴莲
家里只有我和小恐龙爱吃
分了点给老妈大姐
还有好多
吃得撑不住了
突然想到做雪糕
做了之后又想起来去年被踢开的冰淇淋月饼
就这样
它~就第一次出现在我家


榴莲雪糕是自制的
用了冰厨里还剩一半的植物性鲜奶油
所以我的食谱里是没有糖的
刚好家里没了鸡蛋
索性不加
就做个全素的雪糕
还没好已经想试吃
不出所料
很香滑
巧克力冰得太硬了
一切就碎了
这是一大败笔
即使放了一阵子才切还是一样
该如何改善呢?思考中。。。。。


榴莲雪糕 Durian Ice-Cream
榴莲 Durian 300g
牛奶Milk 150ml
植物性鲜奶油 Fresh Cream 450g


做法 Method:
榴莲和牛奶加在一起,放入果汁机搅打成泥状。
Blend durian and milk together in a blender till become puree.
打发鲜奶油成7分发即还有流动的状态。
Whisk fresh cream till stiff,i looks still moving in the bowl.
加入榴莲泥,混合均匀。
Add in the durian puree,mix well.
放入冰格,冰藏。1小时后取出,用搅拌机打一次。一小时后再取出,打发。这能促使雪糕变得更幼滑。继续冰藏成雪糕即成。
Put into the freezer ,after 1 hour,take out and use a mixer to mix once.This step repeat after 1 hour too.It's can make the ice-cream more smoother.Put in freezer till it become ice-cream.


巧克力外皮 Chocolate Skin Yield 2 pieces
黑巧克力块 Dark Chocolate Bar 300g

巧克力隔水融化,倒入模内,大概1分钟,把巧克力倒回锅内。
Double boil chocolate till completely melted,pour into mold,about 1 minute,pour out back into the cooking pot.
把榴莲雪糕勺入模内,放入冰格冰藏15分钟,把剩余的巧克力填满模,刮平,放入冰格冰藏5小时或隔夜。
Spoon durian ice-cream in it,freeze for 15 minutes,pour the remaining chocolate till full, put back to freezer for 5 hours or overnight.

微波面包 (Microwave Bun)


感激乐意分享而不求回报的人
即使不认识也愿意不辞劳苦细心的在分享食谱
所谓的老师
这个名词只不过是别人看得起你给你的礼貌称呼
为了一个食谱劳师动众的围堵一位小女子
对他的行为我却之不恭也鄙视他
他的书他的食谱
我绝不买也绝不用
不想为他免费打开知名度
其实我也不知道该位所谓的老师存在
只知道是来自台湾
说实话该位仁兄的名字。。。我不记得了





一款家喻户晓的面包
我只做过一次
当时面团搓揉过度破筋了
所以面包不是软的
食谱闲置一段时间
阴差阳错下翻找电脑档案
突然。。。。
心思思了

我把食谱减半

材料 Ingredients :
(A)
高筋面粉 High Protein Flour 200g
酵母 Instant Yeast 4g
奶粉 Milk Powder 16g
全蛋 50g
牛奶 73g

做法 Method:
把所有材料过筛混合均匀,搓揉成柔软的面团。保鲜膜盖着发酵1小时(我用了2小时)
Shift & mix all ingredients together,knead till become a soft dough. Cover with cling wrap & rest for 1 hour(I use 2 hours) 

(B)
高筋面粉 High Protein Flour 67g
细砂糖 Castor Sugar 40g
盐 Salt 1/4tsp
牛奶 Milk 27g
奶油 Butter 60g

Method:
1.把(A)撕成小块,与B料混合一起。除了奶油。
Tear (A) become small pieces & add together with Ingredients (B) except butter.
2.揉成软面团后,把奶油加入继续揉出薄膜。
Knead till become a soft dough,add in butter and continue knead till thin & elastic membrane.
3.把面团分割40g,滚圆,湿布盖着休面10分钟。
Divide dough into 40g per pieces,roll & cover with a damp cloth & rest for 10minutes.
4.把面团擀成长形,卷起。休面10分钟。此动作做两次。
Roll out the dough into a rectangle shape,roll it up.This step repeat for once.
5.面团发酵50分钟。刷上蛋液,预热烤箱170度,12分钟。
Let the doughs rest for 50minutes.Egg wash & bake into a preheat ove.170*c,12minutes.
